Turkey Chili

Ingredients:

For the Chili:
1 lb ground turkey
1 tablespoon olive oil
1 large onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
2 cans (15 oz each) diced tomatoes
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
2 tablespoons chili powder
1 teaspoon ground cumin
1/2 teaspoon paprika
Salt and pepper to taste
Instructions:

Cook the Turkey:

Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned. Remove excess fat if necessary.
Add Vegetables:

Add onions, garlic, red bell pepper, and green bell pepper. Cook until vegetables are softened, about 5 minutes.
Add Remaining Ingredients:

Stir in diced tomatoes, kidney beans, black beans, corn, chili powder, cumin, paprika, salt, and pepper. Bring to a boil.
Simmer:

Reduce heat to low and simmer, uncovered, for 30 minutes, stirring occasionally.
Serve:

Serve the chili hot, garnished with your favorite toppings such as shredded cheese, sour cream, and chopped cilantro.
